The Perfect Date Night Recipe with Award Winning Chef Alex Belew

melin Family member and Hell’s Kitchen Champion, Chef Alex Belew is back to help us hit a home run with the perfect Valentine’s Day dinner, because we all those home-cooked meals are the secret to great date nights.


Chef Belew has us preparing Filet Mignon with cauliflower puree, broccolini and mushrooms topped with a red wine au jus.


Follow the video and step by step instructions below to plate the perfect steak for your sweetheart.



Cauliflower Puree Ingredients:

  • 1 head cauliflower, chopped leaves removed 
  • 3 C whole milk 
  • 2 Tbsp butter 
  • Salt 
  • Lemon 

Steps:

  • Add cauliflower to a pot and then add milk, butter and salt. 
  • Bring up to a boil, cover and reduce to medium low for 20 minutes. 
  • Once it is knife tender, add the cauliflower, reserving the milk, to a blender and blend until smooth. 
  • Add more milk to achieve the texture you like. 
  • Season to taste with salt and lemon. 

Filet Instructions

  • Season your steak liberally with salt and pepper and allow to sit at room temp for 20 minutes. 
  • Add avocado oil to a pan and once smoking add the filet. 
  • Cook on all sides for 2 minutes. 
  • After the top, bottom, and sides are seared, add 2 tbsp of butter, thyme, and garlic and baste the filet for 1 minute. 
  • Remove to rest if you like it rare. 
  • For med rare place it in a 350 oven for 4 minutes and then allow to rest for 10 minutes.

Red Wine Jus Ingredients: 

  • 1 shallot, sliced 
  • 4 garlic cloves, chopped 
  • 10 black peppercorns 
  • 1 bunch of thyme 
  • 2 bay leaves 
  • 1/2 bottle of red wine 
  • 1 qt chicken stock 
  • 3 tbsp. Butter 
  • Sherry Vinegar 
Instructions:
  • Saute the shallot and garlic in 2 tbsp. 
  • Butter until translucent. 
  • Add the thyme, peppercorns, and bay leaves and the wine. 
  • Reduce the wine until it has almost evaporated. You are looking for about 3 tbsp. remaining. 
  • Add the chicken stock and reduce it until only 1/4 is left. It should be thick enough to coat a spoon. 
  • Turn off the heat, add the remaining butter and stir to emulsify. 
  • Season to taste with salt and vinegar. 

Broccolini and Mushrooms 

  • Add beef fat to a pan over medium high heat. 
  • Add the broccolini and salt and cook for 2 minutes. 
  • Add the mushrooms and cook for another 1 minute. 
  • Add a splash of lemon juice or lemon vinegar and toss to combine.
